Deliciously Spiced Chops
Often the simplest of recipes can turn out to be just the best, however, when one cooks in this manner it is very important to remember that it is impossible to hide anything for example in a creamy sauce etc so always use the best quality ingredients available. This recipe requires quality lamb chops, trimmed and lean which if you do not want to do this, just ask you butcher. Finally delightfully dipped in a lightly aromatic spiced flour and pan fried, with a touch of fresh lemon juice to lift it to perfection. FABULOUS.
Ingredients

12 trimmed lean lamb chops- 2 each

2 large bunches of spinach- washed and trimmed

Olive oil
-
Sea salt and freshly crushed black pepper- seasoning to taste

Oil for frying

Deliciously Spiced flour:

1 tsp each of fennel seeds, cumin seeds, celery seeds, aniseed and caraway seeds

½ tsp paprika
-
1 tbsp plain flour
-
Generous pinch of sea salt
-
Generous grind of black pepper
-
Garnish:
-
Plenty of fresh lemon wedges
Instructions

Prepare spinach:

01 Wash and trim. Place in a large pan with a small amount of water. Cover, bring to the boil and simmer until soft. Drain well, squeezing to remove excess liquid, place in a bowl and cool. Pour over 2tbsp olive oil, lemon juice, season to taste with sea salt and ground black pepper and combine well. Leave to one side.

Make aromatic spiced flour:

02 Place spices in a mortar and, using a pestle, pound until fine ground. Combine ground spices and flour in a large shallow bowl. Season well.

Marinate:

03 Dust each lam chop lightly with the spicy flour and leave to marinate for 2-3 minutes.

Cook:

04 Heat 1-2 tbs of oil in a large pan and cook chops over a medium heat for 5-10 minutes or until meat is cooked.

05 Serve:

06 Plate up immediately with the warm spinach garnished with plenty of extra fresh lemon wedges and an extra splash of olive oil.
Notes
The lamb chops can also be baked in a hot oven, cooked over a griddle or barbecued, and always cook to the traditional slightly ‘pink centre’ or as desired. This recipe also works really well with fresh Tuna – cut in to thick steaks, just delicious.
