Farmhouse Soup
When the weather gets cold there is nothing more warming than a bowl of homemade soup. This recipe is a real favourite with my family. It may seem unusual to add apples but trust me the combination of all these ingredients really work together.
This soup can be made with water but I have to admit that a good quality chicken stock really lifts this soup to another level.
I should also add this soup keeps 2-3 days in the refrigerator and freezes well if you prefer to bulk make and store.

Ingredients

60g butter

1 large red onion

2 apples- skins on, core removed and chopped

6 celery stalks and leaves- chopped

2 whole garlic cloves- papery skin removed

4 large ripe tomatoes- quartered

4cm piece fresh ginger- peeled and chopped

1 litre chicken stock- or cold water

Sea salt- to taste

Plenty of freshly ground black pepper

Garnish

Swirl of cream and fresh coriander leaves
Instructions

Make soup:

01 Melt butter in large, deep saucepan. Add diced onion and soften. Add all remaining ingredients, lastly the stock and bring slowly to the boil. Reduce heat and simmer for 40 minutes.

02 Blend to a thick puree in a food processor.

Serve:

03 Best hot with a heavy swirl of cream, fresh coriander and hunks of farmhouse bread.
Notes
This recipe is a good base for any homemade soup – feel free to be creative and add any vegetables you like.
