Indian Puris
Again, as I am always looking for shortcuts, I like to make my Puris by the electric food mixer method – so quick and easy!

Ingredients

140g wholemeal flour

140g of plain flour (spelt)

3 tbsp oil
-
Water to mix the dough

Pinch of sea salt- optional

Enough ghee for deep frying
Instructions

Puris:

01 Sieve flours together into the bowl of an electric mixer.

02 Mix all the oil with a little of the water, add to the flour and mix, adding extra water in order to bring together to form a firm dough.

03 Remove from the mixer and knead smooth by hand for a few minutes.

04 Place in a lightly oiled bowl, cover with cling film and leave for at least 30 minutes.

05 After 30 minutes, turn the dough out and roll into a long oblong shape. With a knife cut the dough into equal sized portions the size of a golf ball.

06 Then with slightly oiled fingers, flatten each ball individually with the hands and then roll thin using either the back of your hand or a rolling pin.

07 At this stage the puris are now ready to be cooked.

Pan frying:

08 Heat the ghee until medium hot and drop in the flat pancake shape puris.

09 Submerge each one gently and turn only ONCE. Cook until both sides are golden brown. You will notice during cooking the puris will puff up like a balloon, which is exactly the result you are after.

10 Drain well on kitchen paper. Serve hot or allow to cool.
