Merry Muffin Mix
If you are someone who is lucky enough to have a foodie friend or know someone who really loves to cook, then why not create a ‘foodie’ gift which they can make and bake at home. Ingredients

Muffin Mix for one (1) gift jar

300gm self raising flour

2 tsps baking powder

2 tsps ground cinnamon
-
1 tsp allspice powder- or mixed spice

100gm Pecan nuts or walnuts- chopped

140gm dried apricots- chopped

100gm brown sugar

Packaging
-
1 litre glass jar of your choice- with tight fitting lid

Raffeta string or coloured ribbon

Wooden spoon

Festive label
Instructions

Fill jar:

01 Using your chosen glass jar attractively layer all the ingredients in the order listed.

Make labels:

02 Write the following method on a gift label: “Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300mls milk and 100gms of melted butter. Mix quickly and lightly to a soft batter. Divide between 12 muffin cases. Bake at 180°C for 18-20 minutes”. Use within 4 weeks.

Assemble gift:

03 Using the raffeta string or ribbon attach the festive label with the baking instructions and a wooden spoon to the top of the jar. Store in a cool, dry cupboard until the time you wish to gift to a friend.
Notes
Why not create your own designer muffin jar - follow the above muffin mix recipe but omit the selected fruits I mention and add your favourite dried fruits, nuts and spices. Please remember, one muffin mix quantity fills a one litre glass preserving jar.
