BBQ Masala Prawns
A delightful Indian spiced prawn recipe, suitable for a starter or as part of a main course. GREAT for the barbecue but can be cooked under a hot grill.

Ingredients

900g-1kg large frozen prawns- defrosted

Wooden skewers- soaked in cold water

Marinade

4 flat tbsp garam masala

1 tsp chilli powder
-
2 tbsp paprika
-
2 tsp turmeric
-
1 tsp ground coriander
-
1 tsp salt
-
4 cloves of garlic- crushed
-
1 tbsp grated fresh ginger
-
1 tbsp lemon juice
-
125g butter- melted
-
Garnish:
-
Lemon wedges
Instructions

Prepare marinade:

01 In a large bowl add all ingredients and mix to a smooth paste. Add prawns and cover well with marinade paste.

Assemble on skewers:

02 Skewer several prawns at a time onto wooden skewers. Place on a plate, cover with cling film and refrigerate for at least 30 minutes.

To cook:

03 Barbecue the prawns over a medium heat until the shells are pink and the flesh opaque (approximately 3 minutes on each side).

To serve:

04 Best eaten immediately garnished with fresh lemon wedges.
Notes
Raw unpeeled tiger prawns can be used in this recipe but I find it works perfectly well with large, defrosted commercially prepared prawns. IMPORTANT - remember to pre-soak the wooden skewers in cold water (approximately one hour) as this prevents burning during cooking.
