Lemon and Ginger Lamb Cutlets
If you are looking for an easy, versatile recipe for lamb cutlets then this could be the winner. The marinade is very simple; deliciously tasty using a combination of citrus lemon, fragrant coriander and the sweet intense heat of stem ginger.
Superb with lamb but ideally just as good with poultry.
Great cooked on the barbecue but just as good grilled on a high heat in the oven.

Ingredients

12 lamb cutlets- allowing 2 per person

Marinade:

2 tbsp fresh ginger- grated

2 cloves of garlic- crushed

2 pinches of chilli flakes

1 lemon- juice only

1 tbsp black mustard seeds
-
2 tbsp of stem ginger syrup- taken from the stem ginger bottle

Ginger Garnish:
-
4 stem ginger- finely chopped
-
Handful of fresh coriander- freshly chopped

1 large lemon- rind only, finely chopped
Instructions

Prepare the marinade:

01 In a bowl mix all the marinade ingredients together.

02 Lay cutlets in a dish and pour over the marinade.

03 Cover and refrigerate for minimum of 30 minutes.

To cook:

04 Remove cutlets from the marinade and either cook via a wrack under a hot grill for 10-15 minutes or so, or barbecue over medium coals. Reserve the marinade to brush over the tops during cooking (optional).

05 Serve on a platter with the special garnish scattered all over the top.
Notes
This versatile marinade and special garnish top is also suitable for chicken wings or thighs. Can be left to marinade over night.
