Creamy Lettuce Soup
Never underestimate the power of the simple lettuce. This amazing leafy vegetable is rich in calcium, potassium, vitamin C, and folate. All of which can help to keep your immune system healthy.
Naturally of course best when eaten raw, but delicious when made into a soup. Light and creamy, with a very subtle lettuce flavour. Delicious hot or cold.
I should also share that this recipe is a family keeper, passed down to me by my husbands dear Mother, Helen, who loved to enjoy this soup chilled with a touch of sherry.

Ingredients

60g butter

1 large onion- finely chopped

1 clove of garlic- chopped

500g lettuce- washed and roughly chopped

1 litre of good chicken stock

4tbs single cream

Freshly ground black pepper

Instructions

01 Melt butter in a deep saucepan. Add onion and slowly soften, do not allow to burn.

02 Now add garlic and lettuce and fry for 3-4 minutes.

03 Add stock and simmer for 20-30 minutes.

04 Liquidise or blend to a fine pulp.

05 Return to the pan and add cream.

06 Serve hot or cold with crusty bread.
Notes
If unable to use homemade chicken stock substitute with 2 chicken stock cubes with 1 litre of boiling water. Select the small round lettuce for this soup, or English lettuce as it is often termed. These type of lettuce produce a more subtle tasting soup.
