Homemade Roti

These yummy Indian breads are actually so easy to make and of course, are a delicious accompaniment to any curry.

Best served immediately after cooking which is what I tend to do, however, I recommend the addition of ghee to keep them moist, as keeping warm in the oven can dry them out (the ghee adds the necessary moisture).

By the way, these delicious breads are also referred to as Chapatis.

Ingredients

  • 128g wholemeal flour
  • 128g plain flour
  • 64g rice flour
    - for rolling the roti
  • 2 tbsp sunflower oil
    - rapeseed or coconut oil
  • Pinch of salt
    - optional
  • 200ml water
  • Hot melted liquid gee
    - or coconut oil (optional)

Instructions

  • Roti dough:
  • 01 Sieve and blend flours. Add oil, salt (optional) and enough water to make a smooth dough. Knead well and leave to rest on one side for at least 30 minutes covered.
  • Prepare for cooking:
  • 02 Knead the dough once more, break small pieces of dough and roll in the palm of the hands to form the size of small lemons. Flatten between the fingers, dip in flour and roll out thinly and evenly on a floured flat surface to the size of a pancake about 17 cm in size.
  • To cook:
  • 03 Heat a heavy based frying pan.
  • 04 When hot place the raw pancake roti into the pan, immediately the roti will start to cook. As it starts to bubble up, flip over to cook the other side. Finally, when the roti has what is called 'well bubbled' remove and place on a clean cloth and gentle flatten out.
  • 05 BE CAREFUL - not to burn yourself at this stage as the bread most likely will dispel extremely hot air.
  • 06 Traditionally roti are stacked on top of each other with a generous brushing of melted Ghee.
  • 07 Serve immediately with your favourite curry or keep warm in a moderate oven.

Notes

Using rice flour to roll the roti is a nice touch as it adds additional flavour to what could be termed as a simple bread patty, however, it is not essential. If rice flour is not available just use wholemeal flour. I tend to omit the melted ghee after cooking as opt for a healthier option (less calories). If I do not have a clean towel available, use kitchen paper. Coconut oil also works extremely well with these delicious bread bakes.
