Spaghetti with Spicy Meat Sauce
This is a great go to recipe, as it never fails as everyone loves a spaghetti bolognese. Traditionally the meat sauce would omit the chilli, which of course you can still do, but if you prefer a rich, meaty tomato sauce with a wee hit of spicy heat, then please keep the dried chilli flakes.

Ingredients

400g Spaghetti- commercially prepared

Meat Sauce

2 tbsp extra virgin olive oil

650g lean beef mince
-
2 cloves of garlic- outer skin removed

1 heaped tsp dried chilli flakes- optional

Freshly ground black pepper

Pinch sea salt flakes

1 capful cider vinegar
-
400g tin tomatoes + 1 can measure of water

135g tomato puree (2-3 large tbs)

1-2 large bayleaves
Instructions

Make meat sauce:

01 Heat olive oil in a large casserole pan.

02 Add chopped onion and soften. Add garlic.

03 Add minced beef, chilli flakes, salt and black pepper and brown.

04 Add tin of tomatoes, cider vinegar, 1 can measure of water and bay leaves.

05 Cover and simmer slowly for approximately 1 hour, either in the oven or on the hob.

Cook spaghetti:

06 Place all spaghetti into a large pan of boiling water with 2 tbs olive oil until tender (if really unsure what to do please follow the instructions on packet).

To serve:

07 Turn the spaghetti into serving bowls and top with labels of sauce and a generous amount of freshly of grated parmesan cheese on top.
Notes
I highly recommend to cook this wonderful meat sauce in the oven, as the flavour really does improve with this long slow method.
