Lentils with Dried Lime Leaves

A quick lentil recipe, comforting and nutritious to eat, abundant with lime flavour and wholesome goodness.

Ingredients

  • 1 cup dried red or yellow lentils
  • 1 large onion
    - finely chopped
  • 1 tbsp mustard seeds
  • 1 tbsp ghee
  • 1 tsp turmeric powder
  • 1/2 lemon
    - juice only
  • 400mls coconut milk
    - 1 tin
  • 1 cup water
  • 6 dried lime leaves
  • Sea salt flakes and coarsely ground black pepper
    - to taste

Instructions

  • 01 Melt ghee in a saucepan; add onions and sauté until soft.
  • 02 Add turmeric and stir in the lentils and mustard seeds.
  • 03 Pour in the coconut milk, water and lemon juice plus dried lime leaves. Season to taste and gently simmer for 30-40 minutes or until lentils are soft.
  • 04 You will need to keep an eye on this dish whilst it is cooking in the pot, stirring occasionally and adding more water if the consistency becomes too thick.

Notes

Another easy, nutritious recipe which can be served either thick and sloppy or thin like a soup - extra delicious with a dollop of fresh yoghurt on the top. Can be made ahead of time and re-heated slowly.
