Coriander Chilli Salsa

Coriander chilli salsa is a great accompaniment to barbecued or roasted meats and also perfect with your favourite Indian curry, so not a salsa for the faint hearted.

Ingredients

  • 1 red onion
    - papery outer skin removed, quartered
  • 1-2 hot green chillies
    - only stems removed
  • 2 fresh tomatoes
  • 1 bunch fresh coriander
  • ½ lemon
    - juice only
  • Seasoning
  • Plenty of freshly ground black pepper
  • Sea salt
    - to taste

Instructions

  • 01 Using a food processor pulse all the above ingredients to a coarse texture.

  • 02 Check the seasoning and add what you think you need to suit your taste.
  • Serve:
  • 03 Place in a small bowl and keep until required.

Notes

This salad is best eaten immediately however, if covered and chilled will maintain its flavour for up to 2 hours.
